Our vines, with an average age of 45 years, And our vinification methods add extra complexity to our wines. The nuances of each plot are rigorously respected to the point of vinifying each cuvée separately.
We vinify ourselves every year up to 12 Sancerre whites, 3 rosés and 4 reds. Each of our wines has its own character.
Our classic Sancerre on limestone are mostly vinified in stainless steel vats, to preserve the fruitiness, like the Montachins plot.
The wines on flint are essentially vinified in half-muids of 600 L (oak barrels) including the cuvée des Romains Blanc.
Herses Blancet Galinot white flints are vinified in oak barrels.
Our red Sancerre have been vinified exclusively in stainless steel vats since 2009 for more lightness and to highlight their aromas of red fruits. They are to be tasted fresh.
