Vinification

We have always vinified a big proportion of our whites in 600L barrel. Our full-bodied white wines, are fermented in those French oak barrels and aged for 9 months.

We age 2/3 of our whites, in stainless steel for 6 months to keep them crisp and fruity, more typical of the region, along with the reds and rosés.
